INGREDIENTS (serves 4)
1 medium cauliflower
2 medium potatoes
1 inch fresh ginger
2-3 chopped chillies
1 can chopped tomatoes
½ teaspoon turmeric powder
4 tablespoons vegetable oil
1 chopped onion
2½ teaspoons ground coriander
½ teaspoon garam masala
1 teaspoon ground cumin
salt to taste
coriander to garnish


1. Cut cauliflower into florets and potatoes into 4 pieces
2. Heat oil in a pan on a low flame and fry onions until golden brown
3. Add tomatoes, chillies, ginger, turmeric and salt
4. Add potatoes and fry for 2-3 minutes
5. Add cauliflower to the pan and leave to cook on a low flame
6. Add coriander and cumin powder and stir well

Garnish with fresh coriander leaves
