INGREDIENTS (serves 4)
750g braising steak
6 teaspoons vegetable oil
1 large onion, chopped
4 green cardamom pods
4 cloves
2 cloves garlic, crushed
3 fresh green chillies, seeded and finely chopped
2 dry red chillies, seeded and crushed
2 teaspoons ground coriander
2 teaspoons turmeric
1” piece of fresh root ginger, grated
60ml tamarind juice
salt to taste
lettuce leaves


1. Cut beef into 1” cubes, then heat oil in a large heavy based pan and add beef. Fry until browned all over.
2. Remove with a slotted spoon and set aside.
3. Add onion, cloves and cardamom pods to pan and fry for about 8 minutes, stirring until onion is soft and golden brown.
4. Stir in chillies, ginger, garlic, coriander and turmeric and fry for about 2 minutes.
5. Return beef to pan and add 60ml water and simmer, covered for about 1 hour.
6. Stir in tamarind juice and season with salt, then re-cover and simmer, covered for 15-30 minutes, until beef is tender.
7. Garnish with lettuce leaves.
