Siningang is a soup with a unique tartness of a tropical fruit, Tamarind. fish, shrimp or beef may be mixed with green leafy vegetables for this dish which has different regional variations throughout Southern Asia.

INGREDIENTS (serves 8)
one 50g packet of Mama Sita Tamarind easoning mix
one tomato
1 kg of either fish, shrimp, beef knuckles (pre-boil knuckle until tender)
4 cups of sliced radish
2 cups of string beans (cut into 2” lengths)
4 green peppers sliced
2 cups of leafy greens
(fish sauce to taste)


1. Boil 10 cups of water. Add 4 pieces of sliced tomatoes and ½ a cup of diced onion.
2. Simmer for 5 minutes then add the Mama Sita Tamarind Sinigang mix.
3. Add 1Kg of fish/shrimp/beef knuckle, all the sliced radish, string beans, green peppers and fish sauce.
4. Cover and simmer for 3 minutes or until almost cooked. Turn off the heat and add 2 cups of leafy vegetables. Cover to steam cook the vegetables.

Serve with hot rice.
